Panio Lab- Pan de Muerto
Details What to expect We will start with the essentials to later experience. We will work the dough as a material: exploring how fermentation, texture, temperature and technique transform the final result. Tradition, reinterpreted we will look closely at the bread of the dead: its forms, symbols and rituals. We will know the history behind this bread and explore how a deeply Mexican tradition can also become a space to experience. Shape, texture and design Form, twist, cut, compose. We will experiment with proportions, textures and details to create our own interpretation of this iconic bread. From the laboratory to the table We test, observe and experience at each stage of the process. Around the table Panio Lab is both about sharing and about doing. We will work in a small group, exchange ideas, test the results, and take home your own freshly baked bread.
